Monoglyceride series products

As an additive widely used in food and other industries, the market has developed a series of products. There are mainly ordinary monoglycerides, high-purity (distilled) monoglycerides and derivatives of monoglycerides, etc., which are introduced as follows:

(1) Common monoglycerides

Ordinary monoglyceride is the primary product of monoglyceride obtained by esterification or alcoholysis without distillation or purification. It is a mixture of monoglyceride and diglyceride and other components, of which the content of monoglyceride is generally 35-40%, diglyceride is about 35-45%, ester is about 10-15%, and free glycerol is 1-7%. Because the actual content of single dry ester is low, it can only be used as a general industrial use.

(2) High purity monoglycerides

As an ordinary monoglyceride for industrial use, the general content is 35~40%, and the maximum will not exceed 60%. In order to improve the use of monoglycerides, it is necessary to purify ordinary monoglycerides. The purification method is to remove catalyst and glycerol, and then through polymer distillation, and finally get high purity monoglycerides with more than 90% monoglycerides.

The method of removing the catalyst is to cool the reaction product to about 125 ° C and add a certain amount of phosphoric acid to neutralize the catalyst.

When deglycerin is generally carried out in a thin film evaporator, the gaseous product, water and part of the glycerol (degas) are separated from the mixture at the residual pressure of 0.13~0.25kPa(1~2mmHg) and the temperature is 140℃, and then the glycerol, free fatty acids and part of the short carbon chain monoglycerol are distilled under high vacuum (established by a multi-stage steam vacuum pump). At this time, the operating conditions of the equipment are: residual pressure 0.013~0.039kPa(0.1~0.3mmHg), temperature about 160℃.

After the initial separation and distillation of the product contains about 60% of the monoglycerides, to obtain more than 90% of the monoglycerides, but also use the film evaporator in the three-stage molecular distillation device preparation, the temperature range of the equipment is 205~210℃, residual pressure 0.0013~0.0039kPa(0.01~0.03mmHg).

(3) Derivatives of monoglycerides

The high purity single glycerol ester can be esterified with acetic acid, lactic acid, citric acid, tartaric acid and other organic acids to form a variety of single glycerol oil and become a variety of special purposes emulsifier.

1. Diacetylate of monoglycerides

The diacetylates of monoglycerides are yellow flaky solids or brown ointments, mainly used as modifiers in the bread industry. When added to bread, it promotes an even distribution of oil and prevents gluten and starch from becoming sticky when baking.

2. Lactate of monoglycerides

Monoglycerides and lactates are mainly used in the syrup and bread industries.

3. Polyoxyethylene ether of monoglyceride

Polyoxyethylene monoglyceride ether has good dispersibility, emulsification, foaming and permeability, and can be used as emulsifier and stabilizer for ointment and emulsion, and also as solvent for spices, pigments and medicines. It can be prepared by the reaction of a single glyceride with ethylene oxide.

4. Hydrate of monoglycerides

This product is the emulsion of distilled monoglyceride in water, in the external form it is a soft white substance with a weak acetic acid taste, it is mainly used in the production of bread and macaroni products. The hydrate of monoglycerides and the starch in flour form a complex compound that prevents bread from becoming hard.
